Now some of
us dare to take in our daily
recommended amount of beta carotene
in a fashionably decadent way.

Ingredients:
1
cup all-purpose flour
1
cup unbleached whole wheat flour
4
cups shredded carrot
1-1/2
cups granulated sugar
3
teaspoons cinnamon
3
teaspoons ground ginger
1
teaspoon baking powder
1
teaspoon baking soda
1/2
teaspoon salt
1
cup shredded
coconut
1
15-oz. can crushed pineapple,
drained
3
large eggs
1
cup chopped walnuts
1
cup your favorite white frosting or cream cheese frosting
Instructions:
In a large bowl,
mix together flour, sugar, baking powder, baking
soda, cinnamon, ginger, salt. Add eggs, oil,
shredded carrots, coconut, pineapple. Mix well by hand,
then use electric mixer at medium speed for 2
minutes. Pour into greased and floured 13x9x2
inch pan.
Bake at
350 degrees for 40 to 50 minutes. Cool
thoroughly. Spread with frosting. Sprinkle with
nuts. Servings: 32
