Whole Cranberry Sauce with Cinnamon
and Ginger |

Cranberry sauce is a must-have dish for a
Thanksgiving dinner across America. My husband would
declare that a turkey dinner is incomplete without
cranberry sauce. But not just any store-bought cranberry
sauce; it must be my homemade whole cranberry sauce.
Since
cranberry sauce is a condiment in the relish and chutney
category, it basically contains sweet and sour flavors.
It can be chunky or smooth. However, there are many ways
to have a variety of cranberry sauce by adding fresh and
dry spices, herbs, and fruit. Each year, I serve a
different flavored whole cranberry sauce with holiday
meals. Because my husband loves them so much, I also
serve them at special meals throughout the year.
I would
like to share with you one of my favorite recipes for
cranberry sauce. It is easy to make. Warning: once your
family tastes your homemade cranberry sauce, they
probably would not want to eat canned cranberry sauce
any more.
Ingredients:
1 & 1/2
bags of Ocean
Spray cranberries, washed and rinsed
1& 1/3
cups dark
brown sugar
1/3
cup honey
1/2
cup water
1
tablespoon
ground cinnamon
1
tablespoon
ground ginger

Instructions:
In a medium
non-stick pot, combine cranberries, sugar, and water.
Mix well and bring it to a boil. Reduce the heat and
simmer it until the berries are tender, about 5 to 10
minutes. Turn of the heat, add honey, cinnamon, and
ginger. Mix well. Remove it from the heat and set aside
to cool. Store it in clean jars and keep refrigerated.
It can be made several days in advance. Its full flavor
will develop as it rests in the refrigerator. Remember
to use a clean spoon every time you want to scoop it
into a serving dish in order to assure a longer shelf
life.
