California Green Beans and
Bean Sprouts Stir-fry

It is easy
to find green beans and bean sprouts all year round in
many grocery stores in the Central Valley of
California. They are some of the regular items in my
refrigerator as they are so easy to cook with.

Fresh green
beans are best when they are harvested young before the
beans inside the pod become big and matured. They are
high with vitamin A and C and dietary fiber. When I buy
fresh green beans, I always look for slender, straight
beans with a rich shade of green color and without any
brown spots.
There are
many ways to cook green beans. However, in order to
retain their nutrients, it is best not to overcook them.
I find that the stir-fry method will give cooked green beans
a nice green color.

Here are
some of the steps to help you to achieve a perfectly
delicious green beans dish. I cut off both tips of the green
beans and wash them. Then I fill a big bowl with cold
water and some ice cubes and set aside. Since I do not want to
overcook the beans, I will blanch them in lightly salted
boiling water for 5 minutes. I will remove the pot of
the stove and dump the beans into a large drainer. I run
cold water over them immediately for several minutes,
and then I drop them into the ice water. I let them stay in
ice water about 10 minutes. Ice water will stop the
beans from cooking further. I then drain them
well.
I heat
Canola oil in a large non-stick skillet over medium-high
heat. I add 1/2 cup sliced red onion and 1 teaspoon of
chopped fresh garlic. I stir them well, then add the green
beans and season them with a pinch of sea salt and 1
teaspoon of soy sauce. I cook
the beans for 5 minutes, then turn the heat off and add
washed bean sprouts and continue to stir. At this point,
I sprinkle 1 teaspoon of sesame oil over the beans and give
them a quick stir before dishing them onto a plate. I'll put
some roasted sesame seeds or almonds over the beans
before serving.
